It seems one of the only healthy breakfast foods out there these days is some type of egg variation, whether it be scrambled eggs or a vegetable/meat omelet. Lately, I've been getting a bit tired of these meals, and I've been missing pancakes. Unfortunately, most pancake recipes are quite unhealthy with all of the sugar and flour called for.
Luckily, I stumbled on a great "paleo" pancake recipe online and have been playing around with it. Now I enjoy healthy pancakes at any time in the day.

The original recipe came from MarksDailyApple.com, but I found the pancakes to be rich enough where my taste buds would be done after 1/4 of the batter. My version is less rich, but still sweet and full of flavor. Many additions and variations can be made, but the basic recipe is as follows:
  • 1 small banana (or 4/5 of a large banana)
  • 2 eggs
  • 1 tablespoon almond butter
  • 1 pinch of baking powder (we're talking like 1/16 of a teaspoon)

Blend all of the ingredients together and the mix will be ready for the griddle. My favorite greases to cook them in are coconut oil or grass-fed butter.

There are numerous ways to mix the recipe up. My favorite variations are adding 1-3 teaspoons of cocoa powder, 1-2 tablespoons of shredded coconut, 1 splash of vanilla, or 1-2 teaspoons of cinnamon.

The pancakes are tasty by themselves, but can also benefit from some toppings. I like to add two drops of stevia to heavy cream before whipping it, or adding the stevia to coconut milk before refrigerating it so it thickens. Crushed nuts or berries are also excellent additions to these paleo pancakes.

Try tweaking the recipe to your taste, and enjoy these delicious pancakes!

I have been looking for a pancake recipe to cook....I don't even remember when was the last time I had a pancake. I’ve tried a few paleo pancakes in the past and none of them have been quite right. This looks good and I am so going to try it :)

Cooking them takes a bit of getting used to, but once you get the hang of flipping them I bet you'll love 'em! I sure do : )
